  1. Chop spinach finely and cook in enough water till tender.
  2. Heat 1 tbsp. oil and fry the onions till golden brown.
  3. Season with salt and pepper.
  4. Add spinach puree. Cook till thick.
  5. Roll the eggs in seasoned flour, coat with beaten egg and breadcrumbs.
  6. Fry in hot oil until golden brown in colour.
  7. Cut each egg into four.
  8. Serve the spinach mixture, garnished with egg-quarters.

2 onions, chopped finely
4 hard boiled eggs, peeled
1 egg, beaten
1 cup breadcrumbs
1 tbsp. seasoned flour
Oil for frying
Salt and pepper to taste
