Method
Preheat oven to 400 degrees F.
Grease a 12-cup muffin tin with margarine.
In a small saucepan, heat orange juice until boiling.
Mix in apricots and brown sugar.
Remove saucepan from heat and cool apricot mixture slightly.
In a medium bowl, combine oat bran, wheat germ, whole-wheat flour, and baking powder; set aside.
In a mixing bowl, beat together sunflower oil, skim milk, and egg.
Add dry ingredients and apricot-orange juice mixture to milk mixture, and mix until just moistened.
Fill muffin tin and bake for 15 minutes or until golden brown and a cake tester comes out clean.
