Method for Cheese Cake Mix:

  1. Mix slowly the cream cheese with the machine add the sugar.

  5. Add slowly the heavy cream & vanilla and scrape of the bottom again
  6. Bake at 150 deg C on water bath.

Method for pumpkin pot de cream:

  1. Boil the milk and puree together.
  2. Temper yolks and sugar then add to the milk mixture.
  3. Cook like anglaise.
  4. Add gelatin.

For Cheese Cake Mix:
680 grams Cream Cheese
907 grams Sugar
20 Eggs
340 Grams Sour Cream
1200 grams Heavy Cream
1 Vanilla Bean

For Pumpkin Pot De Cream:
600ml milk
400g pumpkin puree
12 yolk
250g sugar
5 gelatin
