Banana Bread

  1. Preheat oven to 300 degrees F. Have a standard loaf pan ready by rubbing the sides with a non stick spray.
  2. In a large bowl, cream together sugar and margarine until smooth.
  3. Mash the bananas. Add mashed bananas and eggs to the sugar-butter mixture; beat until it blends well.
  4. In a medium sized bowl, mix the flour, baking soda and salt. Add this flour mixture to the banana mixture and blend in thoroughly.
  5. Mix in the chopped nuts so that they are even throughout the batter.
  6. Pour into the prepared loaf pan and place in the oven. Bake approx. for 55-60 mins. or until a toothpick inserted in centre comes out clean.
  7. Remove from oven and cool on wire racks for 10 mins. and then remove from pans.
  8. It is easier to cut the bread when it is cool, but it tastes wonderful when warm.
  9. Makes approximately 10 slices of about 1” thick.
Granulated sugar - 1 cup
Butter or margarine - 1 cup
Banana (mashed) preferably overripe - 1.5 cup
Eggs - 2
All purpose flour - 2 cup
Baking soda - 1 tsp
Salt - 1/8 tsp
Coarse nuts (chopped) (almonds, cashews) - 1 cup
