Method- Remove crusts from bread and butter both sides generously.
- Grease base and sides of a square heat-resistant glass dish and arrange 2-3 slices bread on the base trimming to fit dish.
- Combine currants sultanas and cinnamon sprinkle half over the bread.
- Cover with a second layer of 2-3 slices bread and remaining fruit. Top with remaining bread.
- Combine milk and sugar well pour hot milk into mixture and combine by beating.
- Pour evenly over bread and set aside for 10 mins. to allow bread to absorb liquid.
- Sprinkle with brown sugar and nutmeg. Microwave on 50% power for 13-16 mins. or until set.
Cooking time : 30 mins.

6-8 thin slices white bread
40 gms. currants a pinch of ground cinnamon
100 ml. cream
60 gms. sugar
a little nutmeg
butter 40 gms.
sultanas 350 ml.
milk
3 eggs
15 ml. brown sugar.
