Carrot and Fruit Pudding

Method
  1. Mix together all the ingredients from carrots to spice powder.
  2. Add lightly beaten eggs and milk and stir till uniformly mixed.
  3. Place the mixture in a greased pudding mold, preferable with a well fitting lid.
  4. Cover with double layer of aluminum foil and seal well.
  5. Pour about 2 cups of water in a pressure cooker (Use the trivet if provided).
  6. Place the pudding mold in it.
  7. Pressure cook for 1 hour.
  8. Open the cooker after 15-20 minutes.
  9. Lift out the mold.
  10. Cool slightly and turn out on a serving plate.
  11. Serve warm with custard.

Serves: 6 to 8

Ingredients:
eggs - 2, large
carrot - 350 gm, peeled and grated
white bread crumbs - 250 gm
milk - 150 ml
margarine - 125 gm
soft brown sugar - 125 gm
dates - 100 gm, copped finely
raisins - 100 gm
preserved peel - 50 gm, chopped finely
mixed spice powder - 1 tsp
