Corn Timbales

Method
  1. Fry onions in melted butter till light brown, add capsicums and fry till soft.
  2. Add in corn and cook for 5 mins, remove from fire.
  3. Mix the eggs, seasoning, bread crumbs, baking powder and warm milk well together.
  4. Add these to the corn mixture and stir in the cheese.
  5. Pour into greased moulds or muffin pans and bake in a moderately hot oven for 30 mins.
  6. Top each timbale with a pineapple bit or tomato slice and serve on a bed of shredded lettuce.
Ingredients:
1 tin - creamed corn
1 tin - whole corn
3 - beaten eggs
1 cup - milk
� tsp - baking powder
salt, pepper, mustard to taste
1 cup - fresh bread crumbs
� cup - minced onion
� cup - chopped capsicum
1 tsp - sugar
� cup - butter
� cup - grated cheese
