Egg and corn supreme

  1. Skin the sausages, if desired and cut into pieces one centimeter long.
  2. Heat the butter or oil in a frying pan. Add the sausages and onion. Cook, stirring on medium high heat until browned, for about 5 minutes.
  3. Stir in the tinned corn and mix well to blend, adding 1-2 tbsp.Water, only if necessary.
  4. Add the eggs, salt, pepper and parsley, mixing well. Cook over a gentle heat, stirring frequently until the eggs are lightly scrambled.
  5. Turn into an ovenproof dish and sprinkle with the cheese.
  6. Cook under preheated grill until the cheese is golden and bubbles for about 5 minutes. If you do not have a grill, just mix the cheese in the frying pan itelf.
  7. Serve at once with toasts.
200 gms. sausages
1 can cream style sweet corn
4 eggs, beaten
1 onion, chopped
2 cubes of cheese grated
1 tbsp. Parsley, chopped
2 tbsp. Butter or refined oil
Salt and pepper to taste
