Egg noodles

Method
  1. Boil water (around 2 cups well enough for the noodles to immerse fully) and add a tsp of oil in water.
  2. In the boiling water, add the hakka noodles.
  3. Let it boil for 3-4 mins.
  4. Check if it is cooked then drain the water and keep the noodles aside.
  5. Heat 1/2 tsp oil in a pan, then break the eggs and add it with a pinch of salt and pepper.
  6. Scramble it well, till the egg is completely cooked. Keep aside.
  7. Heat remaining oil in the same pan.
  8. Add garlic, onions and fry for 2 mins. Then add the finely chopped vegetables.
  9. Sprinkle water just to let the veggies get cooked without losing the crunchiness.
  10. Add soya sauce keeping in high flame stir well then again simmer.
  11. Then add pasta sauce, tomato sauce, required salt, pepper powder and mix well.
  12. Stir well until veggies get mixed well with the sauces.
  13. Add scrambled egg and give a quick stir.
  14. Now add boiled and drained noodles to the pan and mix well with sauces and veggies.
  15. Toss the noodles for 2 mins.
  16. Squeeze lemon juice/vinegar.
  17. Switch off the flame and serve hot!

Ingredients:
1 cup - egg/veg pack of Hakka Noodles
1/4 cup - veggies, finely chopped (carrot, capsicum)
1 tsp - soya sauce
1/2 tbsp - pasta/pizza sauce (optional)
1/2 tbsp - tomato sauce
1/2 tsp - vinegar (or lemon juice)
2 - eggs
3 tsp - garlic, chopped fine
1 - onion, chopped
1/2 tsp - pepper powder
2 tbsp - olive oil
Salt as required
