Method
- Combine the curds, sugar, salt, pepper, lime and orange juice and mix well. Chill for 1/2 an hour.
- Slice the hard boiled eggs. Shred the celery and spread on a dish.
- Arrange the sliced eggs on the celery. Cover with the grated carrot.
- Cut the radishes and cucumber into fine slices and arrange along the edge of the dish.
- Cover with the curd dressing and sprinkle with parsley.
- Chill again and serve.
