Eggs in shrimp sauce

Method
  1. Melt the butter and blend in the flour. Cook for 1 min. then add the stock and the milk.
  2. Add the shrimps, salt and coriander leaves.
  3. Cook, stirring constantly, until thick. Add the cheese and cook till it has melted.
  4. Cut the eggs in half lengthwise and remove the yolks. Mash the yolks and mix with the mayonnaise chilli powder, mustard, cumin seeds and a dash of salt.
  5. Refill the egg whites with this mixture and place on a shallow baking dish.
  6. Pour shrimp sauce over the stuffed eggs.
  7. Dot with a little butter and bake in a moderate oven (177 C) for 20 minutes.
Ingredients:
8 hard-boiled eggs
125g cooked shrimps
1&1/2 cups stock
1 cup milk
3 tbsp mayonnaise
1/2 cup chilli powder
1/4 tsp dry mustard powder
2 tbsp flour
1/2 tsp ground roasted cumin seeds
Salt to taste
1/2 cup shredded cheese
4 tbsp butter
1 tbsp chopped coriander leaves
