Fruit and coconut loaf

Method
  1. Combine first four ingredients, cover and stand overnight.
  2. Add sugar, butter, soda bicarbonate and water to date mixture and combine well.
  3. Stir in eggs and sifted dry ingredients.
  4. Spoon into a greased and lined loaf pan.
  5. Bake in a oven at 180 deg C for 60 mins.
  6. Cool slightly before removing from the pan.
Ingredients:
1 cup chopped dates
1 cup chopped dried apricots
1 cup coconut milk
1 cup orange juice
2/3 cup brown sugar
125 gms. butter (melted)
1 ½ tsps. soda bicarbonate
1/4 cup boiling water
2 eggs, lightly beaten
¾ cup wholemeal self-raising flour
¾ cup wholemeal plain flour
1 tsp. mixed spice
