Method
- Mash banana well. Finely chop ginger.
- Cream margarine and sugar until smooth.
- Add lightly beaten egg and mashed bananas and mix well.
- Now add sifted flour returning husks to the mixture, walnuts and ginger.
- Combine and pour out into a greased cake tin and bake at 180ÂșC for 1 hour or until golden brown.

2 cups - wholemeal self-raising flour
1 cup - ripe banana
1/2 cup - brown sugar
100 g - ginger
100 g - walnuts
50 g - poly saturated margarine
1 - egg
