Method
- Sift flour, salt and spice in a large bowl.
- Dissolve the butter and sugar in the warm milk, and add the yeast.
- Leave for 3 minutes, stir once, then mix in a small, beaten egg.
- Pour the liquid into the flour and beat until smooth.
- Move the dough onto a floured surface and knead in the raisins and mixed peel.
- Knead for 5 minutes, until the dough is smooth and shiny.
- Put the oil inside the plastic bag and scrunch it up to grease the inside.
- Place dough in the bag and put it in a warm place to rise.
- When the dough has doubled in size, remove and thump all the air out of it.
- When it's back to it's original size, put it in the greased bag and leave it to rise again for half an hour in a warm place.
- Remove the dough and shape it into four round buns.
- Cut a cross on the top of each with the back of the knife.
- Leave the buns on a greased cookie sheet for about 20 minutes.
- Then, bake them in the oven at 450 degrees for 15-20 minutes.
- The buns bake best in a steamy oven, so put a pan of water on the bottom of the oven.

2 cups - flour
4 tsp - butter
2 tsp - sugar
1 cup - warm milk
1 envelope - yeast
1 - egg, beaten
1/2 cup - raisins
1/4 cup - mixed lemon/orange peel
1 tsp - of corn oil
pinch of mixed spice or pumpkin spice
pinch of salt
