Hot Cross Buns

Method
  1. Sift flour, salt and spice in a large bowl.
  2. Dissolve the butter and sugar in the warm milk, and add the yeast.
  3. Leave for 3 minutes, stir once, then mix in a small, beaten egg.
  4. Pour the liquid into the flour and beat until smooth.
  5. Move the dough onto a floured surface and knead in the raisins and mixed peel.
  6. Knead for 5 minutes, until the dough is smooth and shiny.
  7. Put the oil inside the plastic bag and scrunch it up to grease the inside.
  8. Place dough in the bag and put it in a warm place to rise.
  9. When the dough has doubled in size, remove and thump all the air out of it.
  10. When it's back to it's original size, put it in the greased bag and leave it to rise again for half an hour in a warm place.
  11. Remove the dough and shape it into four round buns.
  12. Cut a cross on the top of each with the back of the knife.
  13. Leave the buns on a greased cookie sheet for about 20 minutes.
  14. Then, bake them in the oven at 450 degrees for 15-20 minutes.
  15. The buns bake best in a steamy oven, so put a pan of water on the bottom of the oven.
Ingredients:
2 cups - flour
4 tsp - butter
2 tsp - sugar
1 cup - warm milk
1 envelope - yeast
1 - egg, beaten
1/2 cup - raisins
1/4 cup - mixed lemon/orange peel
1 tsp - of corn oil
pinch of mixed spice or pumpkin spice
pinch of salt
