Mango cream brulee

  1. Heat the cream with vanilla stick.
  2. HMix in puree with 130 gms. egg yolks.
  3. HWhisk the other 130 gms. egg yolk with sugar.
  4. HMix the warm cream and puree in whisked egg yolks.
  5. HPour in desired mould.
  6. HBake at 130 degrees celcius.

      For spice mascarpone:

      1. Mix mascarpone cheese with star anise and lemon rind.
      2. Keep it refrigerated.

      For sesame tulip cigar:

      1. Cream the butter in a blender.
      2. Add in egg while slowly while blending and mix well.
      3. Add in sugar slowly and mix well.
      4. Pour the batter into a bowl and fold in the flour.
      5. Scoop 2 to 3 spoonfuls of the batter into a bowl and fold in the flour.
      6. Allow the mixture to spread into a round shape and bake at 180C for 6 mins.
      7. While hot, roll the baked waffle into cigar shapes (Note: once cold, the waffle cannot be rolled).
      8. Serve with spice mascarpone in sesame tulip cigar.
500g fresh cream
250g egg yolk
150g sugar
150g mango puree
1 pod vanilla stick

For Spice Mascarpone:
100g mascarpone cheese
5g star anise
1 lemon rind

Sesame tulip cigar
100g butter
50g egg white
75g flour
50g sugar
