Method
- Fry the minced meat in 2 tbsp. oil until the water dries up. Take off the fire.
- Add the 2 beaten eggs, tomato sauce (or tomato puree), mutton stock, finely chopped onions, breadcrumbs, garlic cloves, minced parsley, worcestershire sauce, chilli powder, salt and pepper to taste. Mix well.
- If the mixture looks dry, add 2 tbsp. extra tomato sauce.
- Grease a 8 x 5 x 3 inch loaf tin. Put half the meat into it.
- Place 4 hard boiled eggs, sideways on it.
- Cover with the remaining meat. Press down lightly.
- Bake for approximately 40 mins. At 180 deg C.
- Cool for 5 mins. and then turn out.
- Decorate with skinned whole tomatoes and parsley.
- Serve hot or cold with additional tomato sauce.
Note: The loaf will be easier to turn out if the tin is lined with aluminium foil
