Peanut Brownies

Method
  1. Grease a baking tray. (8� square) Line it with butter paper and grease the paper.
  2. Preheat the oven to 170 C.
  3. Melt butter in a sauce pan.
  4. Add cocoa and cook stirring for 1 minute.
  5. Remove from fire and cool.
  6. Mix flour with baking powder.
  7. Beat eggs with essence and add to the cocoa mixture.
  8. Add the flour, sugar and peanuts.
  9. Pour in the prepared tin.
  10. Bake till a tooth pick inserted in the middle of the tin comes out clean. (About 20-25 minutes)
  11. Take out the tin and cool for 5 minutes.
  12. Turn out on a baking tray, remove the paper and turn again on a wire rack.
  13. Cool completely before icing.

For Icing:

  • Melt the butter. Add coca powder and cook for few seconds. Remove from fire.
  • Add the icing sugar and vanilla.
  • Add boiling hot water, little by little till the icing is a soft paste.
  • Pour over the brownie and spread with a pallet knife dipped in hot water.
  • Sprinkle peanuts on top.
  • When the icing is set, cut the brownie into 12 pieces.

Makes:12 Pieces

Ingredients:
1 cup - powdered sugar
3/4 cup - flour
1/2 cup - butter
� cup - roasted peanuts, crushed
1/2 tsp - baking powder
3 tbsp - cocoa
1/2 tsp - vanilla essence
2 - eggs

For Icing:
1 � cup - icing sugar
� cup - peanuts
2 tbsp - cocoa powder
2 tbsp - butter
� tsp - vanilla essence
hot water
