Pumpkin Nut Cake

Method
  1. Mix Maida with baking powder, salt and mixed spice powder.
  2. Beat butter with sugar till the mixture is light.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Mix in the pumpkin and nuts. Fold in the Maida.
  5. Pour the mixture in a greased 8� round cake tin.
  6. Bake in a moderate oven (180C) till the cake is done.(about 40 minutes)
  7. Turn out on a wire rack and cool completely before cutting.

Serves:6 to 8

Ingredients:
2 2/3 cup - maida (sift before measuring)
1 � cup - powdered sugar
1 cup - pumpkin, steamed and mashed
� cup - cashew nuts, chopped
� cup - butter
3 - eggs
3 tsp - baking powder
1 tsp - salt
1 tsp - mixed spice powder (cinnamon, cloves, nutmeg)
