Quick and Easy Chocolate Banana Cake

Method
  1. Preheat oven to 350F/180C.
  2. In a mixing bowl, whisk flour, sugar, cocoa, baking powder, baking soda and salt.
  3. In a separate bowl, whisk bananas, eggs, oil, milk, water and vanilla.
  4. Add wet to dry and stir until just combined.
  5. Pour batter into a greased and floured cake pan.
  6. Bake for 35-40 mins or until a wooden pick comes out clean.
  7. Allow to cool before removing from pan.
  8. Finish cooled cake with chocolate glaze topping, if desired.

Topping (optional):

Combine all ingredients in a bowl and stir until icing is spreadable. Add more sugar if necessary to thicken. Spread icing over cold cake immediately.

Ingredients:
Medium over-ripe bananas, mashed - 3
All-purpose flour - 1.75 cups
Baking powder - 1.5 tsp
Baking soda - 1 tsp
Caster sugar - 1.5 cups
Unsweetened cocoa powder - 3/4 cup
Eggs, beaten - 2
Milk - 1/2 cup
Water - 1 cup
Vegetable oil - 1/2 cup
Vanilla essence - 1 tsp
Salt - 1/4 tsp

For topping (optional):

Pure icing sugar - 1.5 cups
Medium over ripe banana, mashed - 1/4 cup
Soft butter - 1 tbsp
Vanilla essence - 1/2 tsp
