Ridge Gourd & Egg Curry

Method
  1. Heat oil add onion &green chilli pieces fry till onion turns light pink.
  2. Add ginger &garlic paste, fry till raw smell disappears.
  3. Add ridge guard pieces, haldi, red chilli powder & salt, cover with a lid under sim.
  4. Cook for 3to 4 min or till the guard pieces become soft, sprinkle water if necessary.
  5. Take 2 eggs in a cup, whisk & pour it over the curry, quickly stir the curry for 1/2 min.
  6. So that the ridge guard pieces are well coated with egg, keep the curry on stove for another min.
  7. Remove, sprinkle coriander leaves if desired.
Ingredients:
1/4 kg - tender ridge gourd (peeled cut into small cubes)
2 - onion medium, chopped fine
2 - green chilli, chopped fine
2 - eggs
1 tsp - red chilli powder
1 tsp - ginger & garlic paste
2 pinches - haldi
1 to 1/2 tbsp - oil
1tsp - chopped coriander leaves (optional)
salt
