Method
- Separate the whites and the yellow of the eggs.
- Beat the white of the eggs for about few minutes till fluffy, now add the finely chopped green chillies, onions, coriander leaves, and salt. Keep aside.
- Beat the yellow separately and add it to the whites. Mix well.
- Meanwhile heat the tawa and pour oil on it.
- Evenly pour the egg mixture on the hot tawa.
- Cook on a low flame.
- When one side is almost done, evenly sprinkle the grated cheese and gently fold the omelette.
- Cook on a medium flame till done.
- Serve with slices of fresh bread or toast and ketchup.

2 eggs
1 tbsp - fresh coriander leaves (finely chopped)
1 or 2 - green chillies (finely chopped)
2 tbsp - grated cheese
� - small onion (finely chopped)
1 � tbsp - oil
salt to taste
