Spiced Devilled Eggs

Method
  1. Slice the eggs in half, lengthwise and carefully remove the yolks into a bowl.
  2. Add mustard, mayonnaise, chilli powder, coriander leaves, pepper and salt and mash well. Blend thoroughly.
  3. If not fluffy enough, add a little milk.
  4. Fill the egg whites generously with the yolk mixture and garnish each with a cube of tomato. Chill before serving.
Ingredients:
8 - hard boiled eggs
1/2 tsp - chilli powder
pinch - mustard
2 tbsp - mayonnaise
2 tsp - finely chopped coriander leaves
1/4 tsp - pepper
1 - large tomato, cut into cubes
salt to taste
