Steamed sponge cakes

Method
  1. Whip eggs until frothy, and add half of sugar and whip it again until fluffy.
  2. Add the remaining sugar and whip for 10 mins.
  3. Sift flour and fold it into egg mixture.
  4. Grease a 9 inch (22 cm) square pan and fold in half the batter.
  5. Sprinkle with half of walnuts and dates and pour the rest of the batter over them.
  6. Sprinkle the remaining walnuts and dates on.
  7. Steam for 20 mins. over high heat. Cut into small squares to serve.

4 eggs
150 gms. sugar
150 gms. all purpose flour
2 tbsp. coarsely chopped walnuts
2 tbsp. coarsely chopped dates
