Method
- Place washed strawberries, sugar, lemon juice and cream into blender.
- Place boiling water into small bowl, add gelatine, stir until dissolved.
- Add to strawberries in blender.
- Blend on medium speed for 30 seconds or until mixture is just combined.
- Beat egg whites in bowl until soft peaks form, add strawberry mixture, stir until combined.
- Pour mixture into four individual serving dishes. Refrigerate until firm.

� cup - castor sugar
1 � cups - cream
1 tbsp - lemon juice
1/3 cup - boiling water
2 tsp - gelatine
2 - egg whites
