Thai Omelets with Greens

Method
  1. Break the eggs in a bowl and beat lightly.
  2. Add rest of the ingredients and mix well
  3. Heat a wide, shallow fry pan and heat 3 tbsp of oil in it.
  4. Pour the egg mixture in it and swirl the pan to spread the egg mixture to a thin layer.
  5. Cook till the underside is lightly browned and the top is just set.
  6. Ease the omelet on side and roll up to form a firm roll.
  7. Transfer to a plate and cut into 3 cm thick slices. Serve hot.
Serves 2-3
Ingredients:
Eggs - 6
Finely chopped greens - 4 tbsp
Fish sauce* - 1 tbsp
* If fish sauce is not available use salt to taste and add a pinch of Ajinomoto and 1 tsp Soya sauce.
