Method
- Blanch tomatoes, peel and mash.
- Heat a tsp of oil, fry onion and coriander with salt and pepper.
- Add mashed tomatoes and fry for 3 mins.
- Allow mixture to cool.
- Beat eggs, add turmeric powder and the tomato mix.
- Drizzle a pan with oil and pour out the omelette mixture.
- Allow it to rise and turn over; cook till done.
- Serve hot.
Ingredients:
2 - tomatoes
1/2 - onion
1 sprig - coriander
2 - eggs
A pinch of turmeric powder
2 tsp - oil
Salt to taste
1/4 tsp - pepper
