Vegetable stew with fried eggs
Method
- Peel the potatoes, onions, marrow and tomatoes. Remove the seeds from the capsicums and slice all the vegetables thinly.
- Melt the ghee in a frying pan. Add the oil, vegetables, garlic, salt and pepper.
- Mix well. Cover and cook for 15 mins. Remove the lid and cook for another 30 mins. Add water if needed.
- Pour this strew in a serving bowl and top with the fried eggs. Serve with boiled rice.

500g potatoes
3 capsicums
375g onions
2 cloves garlic (chopped)
1 small white marrow
3 tomatoes
2 tbsp. ghee
1 cup salad oil
Salt and pepper to taste
4 fried eggs
