Brown Rice with Fish and Spinach

Method
  1. Cut fish into 3 cm cubes.
  2. Crush green chili, ginger, garlic, mint and coriander together.
  3. Toss fish with this mixture and salt to taste.
  4. Marinate for 15 minutes.
  5. Heat oil in a non stick fry pan.
  6. Add cloves, cinnamon and onion.
  7. Fry onion on a low flame till softened.
  8. Add fish and chopped spinach.
  9. Cover and simmer till fish and spinach are cooked.
  10. Add brown rice and mix gently.
  11. Leave on a low flame for 5 minutes.
  12. Serve hot sprinkled with lime juice.
Ingredients:
white fish fillets - 350 gm
spinach - 2 cup, roughly chopped
cooked brown rice - 2 cup
green chilies - 2, chopped
ginger - 2 cm slice, chopped
garlic - 4 flakes, chopped
mint leaves - 3 tbsp, chopped
coriander leaves - 3 tbsp, chopped
olive oil - 1 tbsp
cloves - 2
cinnamon - 5 cm piece
onion - ¼ cup, thinly sliced
lime juice - 2 tbsp
salt to taste
