Method
- Apply salt, freshly crushed back pepper and lime juice to taste to the fish.
- Leave aside for 10 minutes. Steam for10 minutes. Cool and chop.
- If using tofu, cut it into small pieces and toss in salt, freshly ground black pepper and lime juice to taste.
- Spread the bread slices with chutney and sandwich two slices together with fish or tofu.
- Make four sandwiches. Cut each sandwich into two parts.
For Mint and Coriander Chutney :
Grind all the ingredients together. (You will not need any water as the onion and the green leaves will give out enough moisture to grind the ingredients to a paste)
