Steam Fish Fillet with Spicy Orange Sauce

Method
  1. Place the fish fillet on a tray.
  2. Sprinkle salt, pepper and lemon juice over fillet.
  3. Steam fish.
  4. Heat a pan, add orange juice, orange, sugar and chilli flakes.
  5. Reduce it to the half, emulsify butter into the reduced orange sauce, should come up to the coating consistency.
  6. Pour sauce over steamed fish.
  7. Stir fry the broccoli and snow peas with salt, pepper and top of fish.
  8. Serve hot.
Ingredients:
Sea bass fillet - 180 gms
Lemon juice - 20 ml
Ginger slice - 15 gms
Spring onion - 25 gms
Leeks - 25 gms
80 ml. orange juice
Orange zest - 1 gm
Sugar - 20 gms
Chilli flakes - 5 gms
Butter - 25 gms
Broccoli - 30 gms
Snow peas - 20 gms
Salt - 5 gms
