Stuffed Pomfret

Method
  1. Split the fish on either side, and debone, keeping the fish intact.
  2. Apply salt, crushed pepper and lemon juice.
  3. Let stand for 15 mins.
  4. Grind all other ingredients to a fine paste with vinegar – do not use water.
  5. Apply paste evenly inside each fish, rubbing it in very gently.
  6. Dab fish with flour on either side and shallow fry.
  7. Remove and serve with lemon wedge and French fries.

Alternatives:

  • Sliced tomatoes and onions may be stuffed with paste.
  • Fish can be braised in the oven, instead of fried.
  • Red chillies may be avoided if too spicy and substituted by paprika powder.
Ingredients:
750 gms - pomfret or any small fish
1 tsp - dried or powdered prawns
10 - dried red chillies (seeds to be removed)
1 tsp - cumin seeds
10 cloves - garlic
1 tsp - turmeric
1 tbsp - tamarind
1 tsp - pepper corns
1" piece - ginger
4 - cardamoms
1" piece - cinnamon
3 - cloves
50 ml - vinegar
1 tsp - sugar
salt to taste
