Method
- Heat the oil, add the whole spices and onions.
- When the onion is golden brown, add the ginger and garlic for fry for 2 mins.
- Then add the tomato puree and fry for a further minute.
- Add the tomatoes, powders, garam masala, chillies (if using) and salt. Stir.
- Add the mutton and potatoes. Stir.
- Add 125 ml. water, cover and simmer on low heat for 40 mins. until the meat is cooked.
- Keep checking to ensure the sauce is not drying up before the meat is cooked, and add more water if necessary.
- Garnish with the chopped coriander.
Note: Always wash hands thoroughly after handling chillies.

8 cloves
8 black peppercorns
4 cardamom pods
1 inch cinnamon stick
1 large onion, sliced
2 tsp. grated ginger
2 tsp. crushed garlic
2 tbsp. tomato puree
250 gms. peeled, chopped tomatoes
4 tsp. coriander powder
1/4 tsp. turmeric powder
1/2 tsp. chilli powder
1 tsp. garam masala
2 whole green chillies, split in half lengthwise (optional)
Salt to taste
800 gms. mutton cubes
2 medium sized potatoes, cut into quarters
125 ml water or stock
Chopped coriander leaves to garnish
