Barley and Shrimp Soup

Method
  1. Shell and de vein the shrimps. Wash the shells and heads well and simmer in the water with � tsp salt, for 5 minutes.
  2. Strain the stock. Add barley and simmer till the barley is cooked.
  3. Heat oil in a non stick pan and fry garlic, ginger and shallots till fragrant.
  4. Add shrimps and chili powder, stir briefly.
  5. Add Soya sauce, tomato paste and vinegar. Add the barley with the cooking liquid.
  6. Simmer till the prawns are cooked. ( avoid over cooking prawns)
  7. Add salt and pepper to taste. Serve hot.

Serves: 4

Note:

  1. Barley is high in fiber and has low GI.
  2. It is a healthy carbohydrate which can be used to advantage in healthy dishes that add good bulk to the meal and keeps you satiated for a long time.
Ingredients:
� kg - shrimps
� cup - barley
� cup - shallots, sliced
2 liter - water
2 tsp - vegetable oil
2 tsp - garlic, finely chopped
1 tsp - ginger, finely chopped
� tsp - chili powder
1 tbsp - soya sauce
2 tbsp - tomato paste
1 tbsp - cider vinegar
salt and pepper to taste
