Chinese style rice

Method
  1. Wash, soak and drain the rice, then boil it in fresh water, adding salt to taste, until just cooked (about 40 mins.)
  2. Drain and rinse.
  3. Stir fry the vegetables with the onion, garlic and ginger and put aside.
  4. Stir fry the prawns and chicken bits (if using) and put aside.
  5. Scramble the eggs and put aside.
  6. Put all the ingredients except the rice, eggs and black pepper into the fry-pan, stir and heat gently.
  7. Carefully mix all the ingredients into the rice and serve.

Serving suggestion: Serve with tandoori chicken

Ingredients:
400 gms. rice, washed and soaked for 30 mins.
Salt to taste
150 gms. mixed vegetables (diced carrots, green peppers, beans, etc.)
1 large onion, sliced
3 tsp. crushed garlic
5 tsp. grated ginger
2 tbsp. oil
50 gms. prawns (optional)
50 gms. cooked chicken bits (optional)
2 eggs
1 tsp. Tabasco sauce (or to taste)
3 tbsp. soya sauce
Ground black pepper to taste
