Special Prawn Curry

Method
  1. Grind onion, ginger and garlic to a paste. Fry potatoes lightly and set aside.
  2. Heat 4 tbsps. oil and fry the onion paste to a golden.
  3. Add the prawns and fry till dry and golden.
  4. Put in salt, curds and all the spices with the exception of garam masala, bay leaves and red chillies.
  5. Cook till dry. Then pour in the coconut milk and cook over a slow fire till the prawns are half done.
  6. Put in the potatoes and sugar and continue cooking till both the prawns and the potatoes are done.
  7. Remove from fire and set aside.
  8. Heat 2 tbsp oil and toss in the bay leaves and red chillies after pricking them and fry nicely, put over the curry.
  9. Sprinkle garam masala and sprigs of coriander leaves on top.
  10. Cover and set aside for 5 mins. before serving.
Ingredients:
500 g - prawns, shelled and deveined
2 cups - coconut milk
50 g - beaten curds
100 g - baby potatoes, peeled
1/2 tsp- turmeric powder
1 tsp - garam masala
1" piece ginger
2 - flakes garlic
2 - medium onions
1 tsp - sugar
1 tsp - ground cumin seeds
1 - bay leaf
3 - red chillies
a few sprigs coriander leaves
salt to taste
