Green Curry Fried Rice

Method
  1. Stir fry green curry paste with oil and coconut milk till fragrant.
  2. Add pearl eggplant fry till they are tender.
  3. Add fish sauce and palm sugar.
  4. Add Tofu and simmer till almost dry.
  5. Add the rice, chili, kafir lime leaf and basil.
  6. Stir till well combined. Serve hot.

cooked rice - 2 cup
tofu - 200 gm
green curry paste - 2 tbsp
coconut milk - 2/3 cup
pearl eggplant - 1/2 cup(sunda kai)
sweet basil - 2 to 3 tbsp
kafir lime leaves - 3
fresh red chili - 1/2
palm sugar - 2 tsp
fish sauce - 2 to 3 tsp or salt to taste
oil - 1 tbsp
