Chicken in garlic sauce

  1. Debone chicken and cut into cubes.
  2. Make batter using both flour and cornflour.
  3. Add chicken and coat well. Drain.
  4. Deep fry chicken cubes.
  5. When crisp remove.
  6. Heat oil and add crushed ginger, garlic and sliced onions.
  7. Then add tomato sauce, stock and seasoning.
  8. Add cornflour blended with a little cold water.
  9. Cook till gravy thickens.
  10. Add fried chicken cubes and remove.
  11. Serve hot.
1 chicken
60 gms. flour
60 gms. cornflour
100 gms. tomato sauce
100 gms. onions
1 bunch spring onions
Salt and pepper to taste
30 ml. chicken stock
15 ml. oil
1 small piece ginger
6 cloves garlic
30 gms. cornflour (for gravy)
2 pinches ajinomoto
Oil for deep frying
