Method
  1. Boil and drain the noodles.
  2. Heat oil and pour in slightly beaten egg. Cook until set. Remove from pan.
  3. Cool and cut into strips.
  4. Reheat pan. Add oil and fry crushed garlic, sliced leeks, shredded bamboo shoots, cabbage, mushrooms, sliced ginger and shredded meat.
  5. Add stock and soya sauce blended with cornflour. Simmer until sauce thickens.
  6. In another pan, fry cooked noodles in deep fat for about 5 mins.
  7. Remove on to a hot dish.
  8. Garnish with egg strips and pour meat mixture over noodles.
Ingredients:
200 gms. noodles
200 gms. chicken (cooked and shredded)
200 gms. cabbage, shredded
2 bamboo shoots
2 eggs
1/2 cup chicken stock
60 gms. mushrooms
1 flake garlic
1 inch piece ginger
2 stalks leek
2 tbsp. soya sauce
2 tsp. cornflour
Salt to taste
Oil for frying
