Method
- Beat the egg nicely, mix in flour then add enough milk to form a thick batter.
- Cut banana in thin and long slices.
- Dip the slices in batter and deep fry to a light golden colour. Drain.
- Place the fritters in a serving plate.
- Mix marmalade and orange juice.
- Heat 1/4 tsp. butter, add marmalade mixture, blend thoroughly and heat a few minutes, pour over banana pieces. Serve immediately.

2 tbsps - refined flour
1 - egg
1 - medium banana, peeled
1 tbsp - orange marmalade
2 tbsps - orange juice
