Chinese Mixed Fried Rice

Method
  1. Wash the rice, cook in plenty of boiling water, to which a tsp of salt is added.
  2. When it is just cooked, strain and spread in a tray and cool.
  3. (This can be done several hours ahead and rice can be stored in the refigerator).
  4. Chop the spring onions and keep the green and white part separately.
  5. Deseed and chop the capsicum.
  6. Finely dice the mushrooms.
  7. Heat oil in a wok, add prawns and fry till they are cooked.
  8. Drain and reserve.
  9. To the remaining oil, add one after another, capsicum, mushroom, white part of spring onion and spring onion greens, in that order, stir-frying briefly after each addition.
  10. Add the rice, salt, pepper and MSG.
  11. Add prawns and chicken meat.
  12. Add scrambled the eggs. Mix well.
  13. Sprinkle with the stock and keep covered on a low flame till heated through.
  14. Serve hot.
Ingredients:
fine grained rice - 2 cup
cleaned prawns - 1\2 cup, chopped
cooked chicken meat - 1\4 cup
eggs - 2, scrambled
spring onions - 5 to 6
capsicum - 1
mushrooms - few
msg - � tsp
oil - 4 tbsp
chicken stock - � cup
pepper to taste
salt to taste
