Sweet Potato Crackers

Method
  1. Sift flour, baking powder and salt together into a large bowl.
  2. Add butter and by hand work it into the flour mixture until it becomes a coarse meal texture.
  3. Cook sweet potato in boiling water until softened.
  4. Cool, remove skin and pur�e with milk to make a smooth mixture. You will need 1 cup of sweet potato pur�e.
  5. Beat sweet potato pur�e into flour and then turn out onto a lightly floured surface. Knead well (about 80 turns).
  6. Divide dough into 4 pieces and roll each very thin.
  7. Cut into rounds or squares. Sprinkle with salt, sesame seeds and a little cayenne, if desired.
  8. Bake in a preheated 350 F oven on an ungreased cookie sheet for 10 minutes until bottoms are slightly browned.
  9. Turn over and bake 3 to 4 minutes more.
  10. Cool on rack before storing in a airtight container.

1 1/2 cups - flour
1 cup - sweet potato
1/4 cup - milk
2 1/2 tbsp - baking powder
1/2 tsp - salt
3 tbsp - butter
pinch - salt
sesame seeds
cayenne pepper
