Sweet chilli chicken

  1. Sieve the flour with the baking powder and cornflour. Add the oil and mix well.
  2. Add enough water to make a thick and smooth batter.
  3. Keep aside.
  4. Heat 4 1/2 tblsp of oil and stir-fry the chicken in it for 4 minutes.
  5. Remove from the pan.
  6. In the same oil, fry the garlic, ginger, capsicum, carrot and onion.
  7. Mix all the ingredients for the sauce in a pan.
  8. Add the capsicum, onion and carrot mixture.
  9. Bring to a boil.
  10. Lower heat and allow the sauce to simmer for 5 minutes.
  11. Deep fry the chicken cubes, dipped int he batter.
  12. Fry till they are golden brown and crisp.
  13. Arrange them in a serving dish.
  14. Pour the sauce over the chicken.Serve with fried rice.
500 gms chicken cut into cubes
1 capsicum seeded and chopped
1 garlic clove sliced
1 onion cut into 6 to 8 wedges
1/2 ginger inch piece sliced
1 carrot sliced

For sauce:

6 tbsp sugar
6 tbsp dark vinegar
2 tsp ginger minced
1 1/2 tbsp oil
A few drops red food colour
Salt as per taste

For batter:

120 gms flour
2 tsp baking powder
6 tsp cornflour
