Method
  1. Sweat shallots in butter.
  2. Add white wine, a pinch each of salt, white pepper and cayenne pepper and reduce.
Ingredients:
2 - shallots, chopped
1 tbsp - cream
¼ pound - butter
1 cup - white wine
white pepper to taste
cayenne pepper to taste
salt to taste
