Method
Cook the potatoes in lightly salted water until tender.
Drain and mash well with butter.
Beat in the eggs and seasoning.
Put the potato mixture into a piping bag fitted with a star nozzle.
Pipe out four flat circles about 10 cm diameter on a baking tray lined with nonstick paper.
Pipe another around the edges to make nests.
Divide the mince mixture into each nest.
Garnish with peanuts and parsley.
If serving immediately, brush the potato nest with a little beaten egg and brown under the grill.
Serve hot with salad.
