Method
- Wash and dry chicken breast.
- Cut into stirps and flatten it.
- Mix some salt and black pepper with the yogurt.
- Cover chicken strips with yogurt.
- Mix
bread crumbs, parsley, Parmesan and spices.
- In frying pan heat 3-4 tbs oil.
- Coat yogurt covered chicken strips with bread crumb mix and pan fry in oil till
it becomes light brown or until cooked.
- Tastes good by itself or with ketchup or any hot sauce.
- Kids love this.
For cajun spice mix: Mix all ingredients.
Ingredients: 2 medium size boneless, skinless chicken breast
1&1/2 cup fresh bread crumb
(pulse bread and parsley in food processor)
1/2 cup curly parsley fine chopped
1 tsp. Cajun spices
1/2 tsp blk pepper powder
salt to taste
1/2 tsp red chilli powder
5 tsp grated Parmesan cheese (or 6 pizza cheese packets)
1/4 cup yogurt
Oil to fry
For cajun spice mix:
2 tbsp paprika
1 tsp salt
1 tsp blk. pepper
1 tsp garlic powder
2 tsp onion powder
2 tsp cayenne or red chilli powder
1 tsp dried oregano
1 tsp dried thyme
1 tsp cumin powder
