Pumpkin Kuthu

Method
  1. Remove rind of pumpkin and centre seeds.
  2. Wash and cut into 3 centimetre cubes.
  3. Boil green beans to water for 5 mins.
  4. Add pumpkin cubes and bring to boil for a further 5 mins.
  5. Heat oil in a pan, fry mustard seeds, turmeric, onions, chillies, garlic, tomatoes and curry masala till fragrant.
  6. Add boiled pumpkin and green beans together with water.
  7. Stir fry for a few seconds.
  8. Add coconut milk and salt to taste.
  9. Add curry leaves.
  10. Stir well and serve.
Ingredients:
1 - small pumpkin
cup - green beans, without skin
2 cups - water
3 tbsp - cooking oil
tsp - mustard seeds
tsp - turmeric powder
1 - onion, medium sized, diced
2 - green chillies, chopped
5 cloves - garlic, chopped
2 - tomatoes, diced
1 tbsp - curry masala
1 cup - grated coconut
2 stalks - curry leaves
salt to taste
