Thai green fish curry

Method
  1. Grind together the green chillies, mint leaves.
  2. Fry chopped ginger and garlic in hot oil, add water and the ground paste and bring to a boil.
  3. Add salt, fish pieces and cook for 5 minutes.
  4. Turn the fish pieces over and cook again for 5 minutes.
  5. Add coconut milk and allow to simmer for 10 seconds.
  6. Serve with steamed rice.

Ingredients:
250g - seer fish, cut in cubes
1 tbsp - mint leaves
4 - green chillies
2 cloves - garlic
1/2 inch peice - Thai ginger
1 tsp - lemon juice
1 tea cup - thick coconut milk
1 cup - water
1 tsp - oil
Salt to taste
