Kakkra curry (Crab curry)

Method
  1. Scrub crabs clean. Separate claw from body and crack. Remove hard shell of crab. Rub in a little turmeric and salt and fry until lightly browned. Keep aside.
  2. In the same pan fry the quartered potatoes only until lightly browned. Keep aside.
  3. In a karahi or pan, heat 2 tbsp. ghee. Add bay leaves and garam masala. Stir fry a couple of minutes. Add sliced onions and stir fry till brown.
  4. Add all the masala pastes, salt and sugar to taste, stir and cook until masala changes colour, sprinkling with water as necessary.
  5. Add 2 cups water, the fried potatoes and crabs. Cover and simmer gently until potatoes are done. Sugar may be added at the same time as the water.
Ingredients:
4 large raw crabs
4 potatoes, quartered
2 onions, ground to a paste
2 onions, halved and sliced fine
1 1/2 tbsp turmeric paste
2 tbsps chilli paste
1 tbsp ginger paste
1/2 tsp garlic paste
Bay leaves
Garam masala
Oil for frying crabs and potatoes
2 tbsps ghee
Salt and sugar to taste
2 cups water
