Mutton with Curds

Method
  1. Grind onions, garlic and ginger to a paste. Soak mutton in curds for 1 hour.
  2. Heat 5 tbsps. mustard oil and fry the ground paste nicely.
  3. Put in the mutton, salt and all the spices with the exception of garam masala and cook till the mixture turns dry and a rich red colour.
  4. Put 1 1/2 cups hot water and cook over a slow fire till the mutton is tender and completely dry. Fry till the oil floats to the top.
  5. Sprinkle garam masala and coriander leaves on top before serving.
Ingredients:
500 g - mutton, cut into serving portions
250 g - sour curds
1" piece - ginger
6 flakes - garlic
2 - big onions
1 tsp - each of ground cumin seeds, garam masala, coriander and turmeric powder
a few sprigs coriander leaves
salt and chilli powder to taste
