Mutton with Bamboo Shoots

Method
  1. Cut mutton into bite size pieces.
  2. Grind onion, ginger and garlic to a paste.
  3. Heat both the oils together in a pressure pan.
  4. Add the ground paste and fry well.
  5. Add mutton and chilli, turmeric and cumin powders.
  6. Fry till mutton is brown. Add coconut milk and salt.
  7. Pressure cook for 8 minutes.
  8. Cool the cooker and open (mutton will be half cooked).
  9. Add all the vegetables.
  10. Simmer till the mutton and vegetables are cooked and almost dry.
  11. Add garam masala.
  12. Transfer to a serving dish and sprinkle coriander leaves and green chillies on top.

Serves:4 to 6

Ingredients:
mutton - 500 gm
onion - � cup, chopped
ginger - 2 cm
garlic - 4 flakes
mustard oil - 2 tbsp
vegetable oil - 2 tbsp
chilli powder - 2 tsp
cumin powder - 1 tsp
turmeric powder - � tsp
coconut milk - 2 cup
salt to taste
bamboo shoots - 1 cup, sliced
capsicum - 2, cut into quarters
shallots (sambar onion) - 4 to 6
garam masala - � tsp
coriander leaves - 2 tbsp, chopped
green chilli - 2 tsp, minced
